Grilled Pumpkin and Mushroom

Ingredients

500g pumpkin, 200g button mushrooms, 1 tbsp dried herbs.

Seasonings:

2 tbsp olive oil, a pinch of black pepper and sea salt.

Steps:

  1. Wash pumpkin (unpeeled) and cut into thin slices
  2. Cut mushrooms into thick slices.
  3. Mix and toss the pumpkin slices with herbs and seasonings in a baking tray.
  4. Preheat oven to 180°C; roast pumpkin for 20 minute.
  5. Add mushrooms; bake until golden.
  6. Sprinkle some olive oil on top, plate up.
