Ingredients: 300g beetroot, 60g dried burdock roots, 100g soy bean, 100g cashew nut, 150g corn on the cob
Seasonings: 1-2 tsp. sea salt
Steps:
- Soak soy beans for 3 hours. Drain and set aside.
- Cut beetroot into big wedges. Cut corn into small pieces.
- Bring 20 bowls of water to the boil. Add all ingredients and cook for 15 minutes with high heat. Turn to medium heat and cook for 45 minutes. Reduce to low heat and simmer for another 1 hour. Turn off heat. Season with salt and serve.
Tips:
- To ensure better taste, add ½ tsp. cooking oil into cold water before boiling.
