Ingredients:
500g pumpkin, 200g button mushrooms, 1 tbsp dried herbs.
Seasonings:
2 tbsp olive oil, a pinch of black pepper and sea salt.
Steps:
- Wash pumpkin (unpeeled) and cut into thin slices
- Cut mushrooms into thick slices.
- Mix and toss the pumpkin slices with herbs and seasonings in a baking tray.
- Preheat oven to 180°C; roast pumpkin for 20 minute.
- Add mushrooms; bake until golden.
- Sprinkle some olive oil on top, plate up.
