Hasselback Potatoes



400g new potatoes, a pinch of dried herbs (adjust to taste)


2 tsp olive oil, a pinch of sea salt and black pepper


  1. Wash potato and rest it on a pair of chopsticks, slice straight down and cut into 0.5cm thins, stop slicing when the knife bits the edge of the chopsticks so that the potato slices stay connected at the bottom
  2. Brush the potatoes with olive oil, make sure to get in between all the slices; sprinkle with herbs, salt and pepper
  3. Lightly oil a baking tray, place the potatoes on the baking tray; cut-side up
  4. Pre-heat oven to 170°C, bake for 30-40 minutes until golden, crisp and tender


Turn the potatoes from time to time until tender and golden.
