Ingredients: 800g turnip, 100g dried black mushrooms, 10 slices ginger
Seasonings:
- Group A : 1 tbsp. grated ginger, 1 tbsp. sugar, 2 tbsp. cooking oil
- Group B : 1 tbsp. vegetarian oyster sauce, 1 tbsp. black bean soy sauce, 1 pc. rock sugar, 1 tsp. light soy sauce, a pinch of sea salt
Steps:
- Soak dried black mushroom in water for 6-8 hours, or until soft and squeeze dry. Remove stalks. Discard the water.
- Add seasonings in group A into the mushroom. Mix well and steam for 30 minutes.
- Heat 1 tbsp. of cooking oil in a wok. Pan-fry mushroom with the 5 to 6 ginger slices until fragrant. Put in seasonings in group B and 1 bowl of water. Turn to medium heat and keep stirring. Add more water if necessary. Cook until mushrooms fully absorbed the sauce.
- Cut the turnip into thick stripes. Put into a pot with a 3/4 bowl of water. Add a small piece of slab sugar. Cook until it boils.
- Add mushroom to the turnip. Simmer until turnip turns soft.
- Remove from heat. Add some sesame oil and serve.
Tips:
- You may prepare a larger quantity of dried black mushrooms at a time and store in freezer for future use.
