Braised Mushroom with Turnip

Ingredients: 800g turnip, 100g dried black mushrooms, 10 slices ginger

Seasonings:

  • Group A : 1 tbsp. grated ginger, 1 tbsp. sugar, 2 tbsp. cooking oil
  • Group B : 1 tbsp. vegetarian oyster sauce, 1 tbsp. black bean soy sauce, 1 pc. rock sugar, 1 tsp. light soy sauce, a pinch of sea salt

Steps:

  1. Soak dried black mushroom in water for 6-8 hours, or until soft and squeeze dry. Remove stalks. Discard the water.
  2. Add seasonings in group A into the mushroom. Mix well and steam for 30 minutes.
  3. Heat 1 tbsp. of cooking oil in a wok. Pan-fry mushroom with the 5 to 6 ginger slices until fragrant. Put in seasonings in group B and 1 bowl of water. Turn to medium heat and keep stirring. Add more water if necessary. Cook until mushrooms fully absorbed the sauce.
  4. Cut the turnip into thick stripes. Put into a pot with a 3/4 bowl of water. Add a small piece of slab sugar. Cook until it boils.
  5. Add mushroom to the turnip. Simmer until turnip turns soft.
  6. Remove from heat. Add some sesame oil and serve.

Tips:

  1. You may prepare a larger quantity of dried black mushrooms at a time and store in freezer for future use.
