Maitake Mushroom Soup with Apple and Fig

Ingredients: 700g apple, 70g figs, 150g cashew nut, 50g dried maitake mushroom, 200g white fungi (soaked), 1pc. dried tangerine peel

Seasonings: A pinch of sea salt

Steps:

  1. Soak dried maitake mushroom and dried tangerine peel for 10 minutes. Drain.
  2. Cut figs into small pieces. Wash and drain the cashew nut.
  3. Remove stem of the apple and chop into pieces. Put white fungi together. Set aside.
  4. Bring 20 bowl of water to the boil. Put in mushroom, dried tangerine peel, figs and cashew nut into the pot and boil over high heat for 15 minutes. Turn to medium heat for 45 minutes.
  5. Add apple and white fungi. Simmer for 30 minutes with medium heat. Turn off heat. Season with salt and serve.

Tips:

  1. Do not let apple boil too long, or else the soup will turn sour.
