3 tbsp yellow mustard, 1tsp olive oil, 1tsp honey, 1tbsp Japanese soy sauce, a pinch of sea salt.
- Cut the cauliflower into small chunks
- Bring some water to boil, put in a few ginger slices, 1tsp salt and 1tsp sugar, blanch cauliflower for 3 minutes, remove and drain
- Plunge cauliflower into iced water for 30 minutes, transfer to a serving plate
- Mix the seasonings well with cauliflower
Mustard is optional, it can be replaced by other sauces.
