Ingredients: 400g okra
Seasonings: 1 tbsp. black soy sauce, some wasabi paste (Japanese horseradish)
- Remove stalks from okra and rinse.
- Bring water to a boil. Put in a few ginger slices, 1 tsp. salt and 1 tsp. sugar. Blanch okra for 1 minute. Remove and drain.
- Plunge okra into iced water for 30 minutes. Transfer to a serving plate.
- Mix seasonings in a small plate. Serve cool with the sauce.
- To retain the crispy texture, do not blanch okra for too long.
