Iced Okra


Ingredients: 400g okra

Seasonings: 1 tbsp. black soy sauce, some wasabi paste (Japanese horseradish)


  1. Remove stalks from okra and rinse.
  2. Bring water to a boil. Put in a few ginger slices, 1 tsp. salt and 1 tsp. sugar. Blanch okra for 1 minute. Remove and drain.
  3. Plunge okra into iced water for 30 minutes. Transfer to a serving plate.
  4. Mix seasonings in a small plate. Serve cool with the sauce.


  1. To retain the crispy texture, do not blanch okra for too long.
